Entering veterinary school and living life on the fast lane, Mary turned to baking as her stress-relief method. “I was stressed out, had a long commute, and baking became a side hobby,” she recalls. Her ultimate goal? To craft the perfect chocolate chip cookie!
After nearly a hundred baking trials, Mary achieved her vision – the classic chocolate chip cookie that has since become a crowd favorite. “It’s a quarter-pound cookie with a slightly crunchy outside and a really soft interior,” she proudly explains.
From Friends to Farmers Markets
Initially, Mary shared her cookies with friends and coworkers. It didn’t take long for word to spread, and soon enough, her husband Derek started bringing batches to work. “We had a lot of excess, and people started placing orders,” she said. And just like that, an idea was born!
The couple began selling their delectable creations at local farmers markets, starting with a modest 100 cookies per week. Fast forward to now, and they are cranking out nearly 1,000 cookies at the Farmington market!
Bringing the Vision to Life
In early 2023, Mary had an epiphany. “I had this very clear vision come into my head; I visualized standing at the counter and all these people coming in to enjoy our cookies,” she shared. Excited about the idea of a storefront, she pitched it to Derek. “Of course, he was totally on board for it.”
Fast forward to early 2024, and the O’Connor couple found the perfect cozy space right in downtown Farmington. “We’re super pumped to have our business in Farmington,” Mary added, glowing with enthusiasm.

At Chocolate Chipped Bakery, quality is the name of the game. Mary and Derek use high-quality ingredients like creamy real butter, King Arthur flour, and rich Belgian chocolate. “We don’t use any preservatives or shortening. Everything is made totally by hand,” Mary emphasizes.
Each day, you’ll discover five staple flavors, alongside rotating options that might just surprise you! “We have four to five flavors that rotate, including a flavor of the week,” Mary explains, adding a touch of whimsy to the mix. This week, they are bringing out seasonal favorites like mint and sugar cookies!
